What’s Cooking? Jollof Rice Recipe

This is a tasty rice dish, that is delicious and easy to prepare. The rice can be served with hot and spicy suya meat, chicken, fish or vegetables or they can be stirred in at the end. It is also sometimes served with fried plantain, homemade coleslaw and salad.
Ingredients:
2 Onions - finely chopped
1 clove of garlic -finely chopped
Half a small cup of vegetable oil
Four tins of plum tomatoes (blended)
Curry powder (2 tablespoons)
Maggi Cube (6)
Chicken stock (half a pint)
500g white rice or easy cook rice
Ground pepper
1. Using a large pot, fry some oil until hot and then add the finely-chopped onions, and garlic.
2. Add the blended tomatoes, ground pepper and curry powder (and then add chicken stock , this completes the stew. Leave the stew to boil for 30 mins until the stew is throughly cooked and becomes darker in colour.
3. Open the packet of rice and boil in a separate pot for about twenty minutes, then rinse the rice until the water is clear.
4. Drain the rice and add to the stew. The stew should be just above the rice level.
5. Continue to boil the rice and stew together, add small cups of water as and when necessary to keep the rice boiling.
6. Cook on a medium heat for another 30- 45mins until the rice is soft and fluffy. When the rice is cooked you will see that it will take up all the stew’s colour and flavour.
